Ingredients

  • 1 whole chicken or 1 kg chicken pieces
  • 1 thumb ginger
  • 1 sliced
  • 1 onion
  • 1 quartered
  • 1 cloves garlic
  • 1 crushed
  • 1 small green papaya or chayote
  • 1 sliced
  • 1 bunch malunggay (moringa) or spinach
  • 1 cups water or chicken broth
  • 1 Fish sauce and pepper to taste

SautΓ© garlic, onion and ginger until fragrant. Add chicken and brown lightly.

Pour in water or stock, bring to a boil, then simmer until chicken is cooked (20–30 min).

Add green papaya and cook until tender. Season with fish sauce.

Add malunggay or spinach just before serving. Serve hot with rice.
