  • 1 cups sliced eggplant
  • 1 cup sliced bitter melon (ampalaya)
  • 1 cup squash
  • 1 cubed
  • 1 cup okra
  • 1 cup string beans
  • 1 cup tomatoes
  • 1 quartered
  • 1 tbsp bagoong or patis to taste
  • 1 cup water

SautΓ© tomatoes and garlic, add bagoong and a little water.

Add squash first, simmer until almost tender.

Add tougher vegetables (eggplant, string beans, okra) then bitter melon near the end to avoid overcooking. Simmer until vegetables are tender. Serve hot.
